A complex Agave Spirit from NOM 1607, made with slow-cooked agave hearts in traditional brick ovens, then crushed with a volcanic tahona stone. It's distilled in copper pots for warmth & column stills for balance, aged in used bourbon barrels, and bottled at 40% ABV. Its aromatic profile includes agave, wood, fruits, herbs & spices; a rich & complex development adds caramel, vanilla, melon, tart green apple, lemon peel & golden raisin. The finish is herbal, medium in length, with notes of oak, pepper, creme brulee & black tea.
