May 2024 - Provence Appearance: Pale gold with hints of apricot. Nose: Peaty and smoky, with no detectable alcohol aromas; a rather light nose. First taste: Clear and delicate, like a pure, crystalline nectar. A second taste: Peaty with refinement. No fruity or smoky flavors detected. The third taste: Leaves a fine, slightly spicy film on the tongue. The flavors of this whisky are very refined. Not overdone, but possessing finesse and delicacy in the freshness that begins the tasting before the peat emerges. Like a beautiful woman emerging from a nighttime swim, unadorned, with her nocturnal coolness and body warmth. Lacks significant body. A whisky for an elegant woman, offering a precise peaty taste combined with refreshing sweetness. Tasted at a family estate in Provence, on a sunny table, accompanied by birdsong, rose petals, and southern sunshine. The sweet life embraced me and this whisky delighted my palate.. life is good.

A well-rounded Irish Single Malt Whiskey from Cooley Distillery in Dundalk. It undergoes double distillation, following the Scottish method, and is subsequently matured in Bourbon casks. It presents a full genesis with flavors of peat, violet, touches of honey, hazelnut, and oak; while a smooth journey introduces notes of honey, malt, fruit, vanilla oak, and bright peat; culminating in a protracted & graceful finish with honey, peat, hints of chocolate, vanilla, and oak. Lovely aroma of campfire smoke, leather, and tobacco. Subtle salty and grassy notes are also present. It coats the mouth and tongue like a thin syrup and has a pleasant lingering quality. Flavors detected include smoke, spice, salt, nuttiness, honey, and a hint of dried fruit like raisins or plums on the second taste. Adding a few drops of water opens up the nose to more fruity and floral notes, cutting through the smokiness while leaving a decent floral and fruity taste.

Irish peated. Pale color. On the nose, peat is noticeable, offering a medicinal quality, with orange fruit, blue cheese, and effervescence. Floral notes linger in the background. On the palate, it resembles an Islay but with more fruitiness. Red apple notes are present. The finish is peachy, yet maintains its peated and cheesy character. Nice notes, but they seem a bit disjointed, especially the cheese elements.

Vanilla and oak are immediate, with oak persisting throughout. Hints of licorice, mineral earthiness, leather, and touches of brown sugar are present. The finish is peppery and peaty, lasting a moderate to long time. The peat is of medium strength and quite noticeable. A fine and full peated Irish whiskey.
