The aroma begins with floral and sweet notes of chamomile, powdered sugared strawberries, and lightly charred lemon and lime. A subtle earthiness develops with grilled portobello mushrooms, asparagus, and fried yucca, fading into tart flavors of sour cherries, orange zest, and baked apple. It then transitions to cloves, dill, and a light smokiness with no alcohol burn. The taste has a medium, airy texture. It starts floral and sweet with chamomile, powdered sugared strawberries, and lemon-lime sorbet. A light earthiness follows, with olive oil-covered grilled portobello mushrooms, asparagus, and mashed potatoes. This leads to cherry cough drops, orange blossom, and baked apple, before shifting to cloves, dill, and vanilla crème brûlée, with no alcohol burn. The finish is medium in length, featuring stewed cherries, orange blossom, vanilla crème brûlée, apple pie, and very light charred asparagus. If tasted blind, I could have easily mistaken this for a rye finished in red wine, as the roasted agave notes are very subtle beneath the sugared red berries. This tequila clearly targets whiskey drinkers, offering a near-perfect balance between sweet and savory. The roasted agave's vegetal notes and winter spices help cut through the dominant sweet, rich fruits that might otherwise make it overly sweet. This was an enjoyable experience, exploring the unique combination of red wine and tequila. While it might be too sweet for some, I found the flavors suited my palate exceptionally well, developing more with each sip until the sample unfortunately ran out. Many thanks to for the generous sample of this spirit.

About this bottle
Compoveda is a tequila brand developed in partnership with three master tequileros, with each tequila produced by a single distiller. This extra añejo variety was created by Alberto Partida, a fifth-generation tequilero, at NOM 1477 in the Tequila Valley. Following slow roasting and distillation, the tequila spent over five years aging in French oak barrels previously used for California red wine, then finished in medium-charred American oak barrels prior to bottling.

It's uncommon, truly, only one prior occasion, that I've sampled a tequila and then immediately purchased a bottle. This marks my second encounter ever. My knowledge of tequila is limited, and I know very little about this particular brand. However, I had a serving at a relative's home last night and was captivated by it. This is not a light, summery, floral beverage; it's intended for chilly, dark winters. It possesses a heavy, sweet character, abundant with winter spices like cardamom, nutmeg, cinnamon, and cloves. I suspect it was aged in or finished in red wine casks, though I'm uncertain. With an age of approximately 5 years, it qualifies as extra anejo. Thus, you immediately perceive the winter spices, reminiscent of German mulled wine. Imagine High West Midwinter, but with an herbal finish. It appeals to whiskey aficionados. The color also caught my attention, a deep reddish tone. The aroma is spicy and herbal. The taste is distinctly Christmassy, with winter spices and herbal notes. If you appreciate High West Midwinter, this might be to your liking. It's slightly distinct due to the herbal element, which is perhaps to be expected with tequila. Nevertheless, the mid-palate is dominated by winter spices.
A very gentle aroma with hints of light smoke, cracked pepper, red orchard fruits, and soft vanilla. The palate is led by pepper initially, followed by sweet red plum and agave nectar that persist through a very extended finish. It's a bit too sweet for my preference.
Can't identify a specific flavor but this is excellent
