Levi Cosby 3.3

Nose: Features fruit, especially apple, alongside digestive biscuits, honey, and vanilla. Palate: Tastes of apple tart, poached pear with honey, and apricot nectar. It starts sweet, and adding water enhances this further. Water also reveals a hint of ginger spice, improving its balance. The texture is pleasant. Finish: Brief, with notes of ginger biscuits. Established in 2016, the distillery commenced production the following year. It is under the ownership of Morrison Glasgow Distillers Ltd., which has ties to the independent bottler Morrison Scotch Whisky Distillers, though they are separate entities. The distillery is situated in the historic Pump House, a renovated building by the river Clyde. Their inaugural whisky was released in 2021, and they now offer several expressions in their main lineup. The distillery boasts an engaging visitor centre detailing Glasgow's history and Clyde's industrial past, with various tours available. A tasting is included in the basic tour, showcasing four of their whiskies, including this one. This "Bourbon Cask" expression is not commercially available but serves to illustrate the spirit's character after maturation for just over 3 years in refill bourbon casks. The outcome closely resembles a traditional un-peated, un-sherried whisky profile, offering an interesting glimpse into their production methods. Tasted at the distillery on April 22, 2025. Rated "Above Average": 82/100 (3.25 stars)
