This was an unexpected try for me. I admit I was already a little tipsy when I had the chance to taste, so my impressions can’t be as sharp as I prefer. However, The nose is sweet like salted caramel and key lime pie, but the palate is practically a juxtaposition with its rather intense woodiness. The same rich limey agave flavor comes through with wood, black pepper and charcoal which sticks to your tongue on the finish. It became more interesting as the spicy finish became numbed, with more of the savory and sweet elements pushing forward. Namely more salted caramel and vanilla. Another reviewer noted ‘celery’ in the finish, and very strangely enough, I agree. There’s also a fair touch of ethanol present. I disliked it at first but it really grew on me once I got past the wood. Maybe I’m just new to añejo..?

About this bottle
Located in the northern state of Tamaulipas, Chinaco is the sole tequila brand produced there. Its distillery's owner successfully campaigned for the region's inclusion in the official tequila-producing zone. The añejo is crafted using agave from both highland and coastal areas of Tamaulipas, supplemented by a small quantity from Jalisco. This tequila undergoes maturation for thirty months in barrels, with 90% having previously held Glenlivet single malt and the remaining 10% having held ex-Bourbon.

Enjoyed neat. The aroma consists of oak, earth, leather, herbs, with a subtle hint of roasted agave, char, and vanilla. Quite pleasing and contrary to many that lean towards sweet/vanilla. The taste is fairly light, beginning with oak, followed by mild agave sweetness, honey/light caramel, and anise. The finish is light and clean, featuring some herbal bitterness, very subtle sweetness, and an oily mouthfeel. I truly appreciate what this tequila adds to my collection. The earthy/herbal/oily combination is distinctive and offers a nice contrast to numerous other tequilas. I'll keep a bottle for variety, but the value is questionable for regular consumption.
What a week... yesterday marked my first rum, and today my first tequila. Thank you, Davie, for this incredible bottle! I'm not certain about what constitutes good or bad tequila, so I won't assign stars. Moving on to the notes --- I found this particular tequila amazing. Right after opening the bottle, I detected notes of grass, sea salt, and lime. I could smell this all day. The taste echoes the aroma --- sweet and salty, fresh green lime, and a whisper of smoke --- similar to a mild peated Islander. I really enjoy this --- perhaps the first spirit besides red wine and whiskey that I've genuinely liked. Davie --- thank you!
Get ready for a wild ride! This is stepping into the unknown. So much is happening that I don't recognize, but here are the tastes I could pick out – just hang on. try. to. follow. Aroma: briny sea air, zesty lime, smooth vanilla, and forest floor pine, with a hint of botanical gin. Taste: a mix of sweet and savory, luscious tropical fruits, featuring tart, slightly underdeveloped kiwi, a touch of mint, and a whisper of smoke. Aftertaste: immense, grounded, gently peppery, with a persistent fresh celery note. Yes, celery. It'll last till morning. Empty glass: fragrant woodsy notes.
The aroma is reminiscent of butterscotch, and the flavor is smooth. However, its thin body contributes to this smoothness. Adding ice or mixing will diminish the flavors.
Butterscotch, vegetal notes, cinnamon.
