About this bottle

In 2005, Charbay produced this rum from Hawaiian and Jamaican sugar cane. The cane was pressed, and the juice was concentrated into a syrup using a low-temperature vacuum still, avoiding high heat for molasses production. This syrup was fermented with Champagne yeast, aged on the lees for a week, and then slowly double-distilled to 137 proof in a Copper Alembic Pot Still. It was first aged in stainless steel for five years, followed by three years in Chardonnay (French Oak) barrels, and concluded with two years in glass. Bottled at full barrel strength, uncut and unfiltered, this single batch (unblended) release saw only 465 cases produced, with 120 cases released in 2016.
