An elegant agave spirit created in Arandas, Jalisco, using 100% agave and aged in oak barrels. It begins aromatically with notes of roasted agave, wood, herbs, and spices; a rich middle phase adds caramel and oak notes; culminating in a well-rounded, moderately long finish. May 2017

About this bottle
Casa Centinela (NOM 1140) in Jalisco, Mexico's Los Altos (Highland) area produces tequila, a tradition they have upheld for over a century. Their piñas of 8-year blue weber agave are slow-cooked in clay ovens and then crushed. The resulting aguamiel is fermented, twice-distilled, and aged in former bourbon barrels.

Pale amber. Earthy, sugary. A balance of sweet and bitter, chocolate. Medium body, gentle burn. Pleasant.
