About this bottle

From the Virginia distillery, this is one of the "R & D" experimental limited releases. The whiskey, its Roundstone Rye bottled at cask strength, is finished in a hickory syrup barrel from Falling Bark Farm. This single barrel whiskey was released in June 2018 at the distillery's tasting room.

Aroma: Abundant brown sugar. Rich baking spices: ginger, nutmeg, clove, cinnamon. Taste: Mirrors the aroma. Sweetness from brown sugar and hickory syrup. Tobacco and leather provide balance to the sweetness. Significant wood presence for a relatively young whiskey with a distinct finish, yet the hickory counters the tartness often found in overly woody spirits. The alcohol isn't upfront, making it quite enjoyable neat, though the finish is bracing. Finish: Spices yield to a prominent maltiness with a whisper of salt. Likely requires several days to fully consume. Truly, this whiskey's combination of barrel proof and hickory finish makes it linger exceptionally long. Overall: This is a commendable whiskey demonstrating how careful barrel management can imbue a young spirit with considerable complexity. It would be exceptionally good if allowed to age for 4-6 more years. While the $90 price is high, it reflects the rarity and innovation from a nascent distillery. It's a whiskey for special occasions. p.s: I seldom add ice to whiskey, but this one seemed suited for it, and it proved effective. The ice tempered the intense spices while amplifying other notes: brown sugar and baking spices. It also developed a slightly herbal character. This is another excellent way to experience the spirit, but avoid letting the ice fully melt to preserve its quality.

Sampled at the distillery. Truly outstanding, cask strength spicy rye pairs wonderfully with the sweet syrup. It adds depth and sweetness without being cloying. I wish it were more accessible!

Very noticeable baking spices (cinnamon and clove) on the nose and palate. Woody sweetness? Perhaps the hickory syrup, I'm not certain. Cinnamon and wood on the finish. A very enjoyable whiskey. Part of a bottle share.
