This oak-aged Cachaça Vira Copos, bottled in a premium bottle, is the same spirit. The owner, Mr. Desidério Castro Filho, created it after informal gatherings with friends, calling the idea "Vira Copos," aiming for a cachaça to please demanding palates. The process starts with harvesting sugar cane from Fazenda Vira Copos in Rio Manso – MG, following strict criteria for soil, variety selection, and manual harvesting without burning. Grinding occurs within 24 hours, followed by straining and decanting the broth, and adjusting the Brix content before fermentation. Fermentation uses natural nutrients without chemical additives, ensuring sustainability. Distillation in a copper still uses only the "Coração" (heart), eliminating the heads and tails. Storage in jequitibá barrels, oak barrels, and stainless steel tanks matures and softens the drink through oxidation and chemical reactions forming esters. Filtration removes impurities for clarity and shine. Cachaças Vira Copos maintain a uniform standard, with their Identity and Quality Standard (PIQ) meeting the palate of discerning tasters. Cachaça Vira Copas Ourol is aged in oak barrels for one year. It has 42% alcohol, a golden color, and a distinctive flavor and aroma. Source: Cachaçaria Nacional.
