The farm's proprietor, Mr. Desidério Castro Filho, enjoys hosting guests on his land for cachaça gatherings each weekend. During one such event, which he named Vira Copos, the concept for a cachaça possessing qualities he was confident would satisfy discerning palates emerged. The production process involves several stages, beginning with the harvest of sugarcane cultivated at Fazenda Vira Copos in Rio Manso – MG. Soil analysis, sugarcane variety selection, and harvesting adhere to stringent criteria aimed at enhancing the product. The planting is executed with proper methods and traceability. Sugarcane, harvested manually without burning, undergoes meticulous selection and cleaning. It is then milled within 24 hours of harvesting. The juice is strained and decanted to remove impurities. Subsequently, the Brix content is adjusted before fermentation. Fermentation utilizes natural nutrients, free from chemical additives, reflecting a completely sustainable approach. Distillation occurs in a copper still to ensure quality, with only the "Heart," the most refined portion of the cachaça, being retained while the "Heads" and "Tails" are discarded. Aging, a process that elevates the sensory qualities of fine spirits, is carried out in jequitibá barrels, oak barrels, and stainless steel tanks, contributing to the drink's maturation and smoothness. Wood aging facilitates oxidation through the pores of the wood, enabling gas exchange and initiating chemical reactions in the cachaça's secondary components. The distinct characteristics developed during aging are primarily due to the slow and continuous formation of esters. Filtration involves passing the distilled spirit through filters to remove any remaining impurities, enhancing clarity, transparency, and shine, and correcting any potential defects like excessive copper. Cachaças Vira Copos maintain a consistent standard across each harvest, with their Identity and Quality Standard – PIQ, designed to appeal to the most discerning tasters. Cachaça Vira Copas Silver 670ml is aged for one year in jequitibá barrels (Brazilian wood) and has an alcohol content of 42%. It exhibits a pale yellow hue, a distinct and unmistakable flavor and aroma profile with notes of sugarcane, floral, fruity, and herbal undertones, and well-integrated alcohol.
