The farm owner, Mr. Desidério Castro Filho, enjoys hosting friends at his property on weekends for cachaça. During one of these gatherings, which he named Vira Copos, the concept of creating a cachaça with characteristics he was certain would appeal to the most discerning palates emerged. To achieve this, the process involves several stages, beginning with the harvest. The sugarcane used in production is cultivated at Fazenda Vira Copos in Rio Manso – MG. Soil analysis, selection of the sugarcane variety, and harvesting are all conducted according to strict criteria aimed at product improvement. Its cultivation is performed correctly and with traceability. Sugarcane is hand-harvested, without burning, and undergoes rigorous selection and cleaning. Next, it's milled within 24 hours of harvest. The juice is strained and decanted to remove dirt and impurities. After this, the Brix content is adjusted before being sent for fermentation. Fermentation utilizes natural nutrients without any chemical additives, demonstrating a completely sustainable process. Distillation is carried out in a copper still to ensure quality. Only the "heart," the most noble part of the cachaça, is used, with the "heads" and "tails" being eliminated. Storage, in turn, enhances the sensory qualities of noble spirits and is done in jequitibá barrels, oak barrels, and stainless steel tanks, allowing the spirit to mature and soften. Aging in wood facilitates oxidation through gas exchange via the wood pores, involving a series of chemical reactions affecting the cachaça's secondary components. The unique characteristics acquired through aging are primarily developed by the slow and continuous formation of esters. Filtration involves passing the distillate, after distillation, through filters to remove any potential impurities, enhancing the spirit's clarity, transparency, and shine, and correcting any defects, such as high copper content. Consequently, Cachaças Vira Copos adhere to a uniform standard for the spirit produced throughout the harvest. Thus, its Identity and Quality Standard – PIQ, meets the expectations of the most demanding spirit tasters. Cachaça Vira Copas Armazenada em Carvalho is aged in oak barrels for one year.
