The soil in the Taquari River valley, located in Santa Tereza, Rio Grande do Sul, is recognized as among the most fertile globally, providing ideal conditions for growing sugarcane, the primary ingredient for cachaças. The businesses Remus and Bettinelli Ltda, directed by partners Ivandro Remus and Michel Bettinelli since 2001, expanded their sugarcane cultivation in Serra Gaúcha to produce a premium beverage, originating from a region with over a century of heritage in crafting artisanal Cachaça. In the fields, harvesting occurs when the sugarcane reaches peak maturity. The cultivation is entirely sustainable, holding the "Produto Orgânico do Brasil" certification from a participatory body and overseen by the Serra da Eco Vida nucleus. This certification assures consumers that no chemical additives were used throughout the entire process, from cultivation to harvest, and signifies the management's "green" philosophy for Cachaça Velho Alambique. Following manual harvesting, the sugarcane is milled the same day to extract the juice as swiftly as possible, a crucial step for achieving a high-quality spirit. The families aim to create cachaças that blend traditional methods with modern production techniques, concentrating on artisanal spirits with an annual output of only 30,000 liters. Although the goal is to continuously increase the brand's presence in new Brazilian states, Cachaça Velho Alambique has also made inroads into competitive markets, including England, Ireland, and Italy. "We are working diligently to demonstrate the qualitative differences between artisanal cachaças and industrial ones to the Brazilian public. The subsequent step will be to promote this culture internationally as well," explains Ivandro Remus, a partner at the distillery. Cachaça Velho Alambique Carvalho is a premium, organic spirit created from a blend. Aged for two years in French and American oak barrels (a mix of both), it has an alcohol content of 40%. It is a highly aromatic distillate, offering notes of vanilla and a subtle spicy sensation on the palate.
