Established in Campos dos Goytacazes, in the interior of Rio de Janeiro, the distillery was founded in 2004 by Altair Perdomo. He began the venture at age 65 as a retirement project. Altair emphasized that quality would take precedence over commercial appeal and has even rejected entire batches that didn't meet his standards. Even at 87 years old, he still oversees operations closely, alongside his grandson and successor, Arthur Perdomo. The distillery operates with 100% sustainability. With guidance from Dr. Leandro Marelli, a cachaça specialist and neighbor, Soberana Carvalho Americano Cachaça is aged for 6 to 12 months in 200-liter American oak barrels and has a 40% alcohol content. It displays distinct sensory qualities due to the interaction of the spirit with the wood. The aroma is typically complex, featuring notes of vanilla, caramel, spices, and dried fruit. On the palate, the drink has a velvety texture, with sweet flavors reminiscent of almond and a slight bitterness. The color also varies, shifting from pale yellow to mahogany.
