Senhor dos Passos Cachaça originates from Antônio dos Santos, a district of Caeté, within the Serra da Piedade and Caminho Religioso da Estrada Real region. Our cachaça is meticulously crafted through an artisanal process, involving manual cane harvesting, fermentation in stainless steel tanks, and distillation in copper stills. We exclusively use the heart cut, ensuring a premium final product, with all equipment made of copper and stainless steel. This guarantees rigorous quality control throughout the production, from milling to bottling, resulting in an exceptionally flavorful cachaça. Our journey began with the family patriarch, who for over 28 years balanced an executive career with his agricultural passion, always supported by the matriarch. This passion was passed down to the children, who embraced this path, with one pursuing an Agricultural Engineering degree to continue the established legacy. The property where the cachaça is made was initially dedicated to banana cultivation, a regional tradition. However, during a family get-together on the main house's veranda, while enjoying a fine cachaça, the idea to start a new venture arose – this time producing the authentic Brazilian spirit. Driven by this passion, sugar cane was planted, replacing bananas, for the creation of this esteemed drink that meets high-quality standards, with continuous efforts to refine techniques for optimal cane extraction. All involved completed various courses, and our agronomist now serves as our master distiller and technical lead, infusing quality and modernity into our production. Our name is derived from an ancient and traditional ritual performed over 200 years ago at the Igreja Matriz de Nossa Senhora de Nazaré, near our still's location and where our cachaça is manufactured. This ritual, exclusive to men, occurs on Ash Wednesday. A cedar sculpture of Nosso Senhor dos Passos is removed from the altar and bathed in cachaça, with the infused liquid then stored and distributed among the faithful, believed to bring blessings and heal ailments. Legend has it that the cachaça preserves the holy image and, according to tradition, prevents the wood from deteriorating over time. Remarkably, this is the only sacred artifact in the Church of Our Lady of Nazareth that remains untouched by insects or the ravages of time over these two centuries of tradition. This extra premium cachaça is aged for two years in American oak barrels, exhibiting a yellowish hue tending towards gold. It possesses a sweet and velvety taste with a liqueur-like sensation, low acidity, and an aroma of wood, citrus fruits, honey, and vanilla, culminating in a very pleasant aftertaste. With 40% ABV, it is produced solely from the heart of the distillation and subsequently aged for two years in American oak barrels, yielding an aromatic, smooth, and velvety spirit.
