Cachaça Rio do Engenho, located in Ilhéus, southern Bahia, has roots in the area of Brazil's first sugarcane mill. The sugarcane grown there in 1537 for sugar production vanished with the mill's ruins. However, cultivation restarted in 2005 with a new setup and aim: to craft a true Brazilian spirit from fermented sugarcane juice. The owners relocated from Campinas, São Paulo, to Ilhéus seeking a better quality of life. Farming and cachaça production were never part of their previous lives. A Chemistry and Computer Science graduate, Luiz Fernando Galletti, took a master still course in 2004. Initially, the plan was to make a drink for friends as a hobby, but the venture grew significantly and became professional. Cachaça Clássica is a young, unaged spirit that emphasizes the fresh, authentic taste of sugarcane. This special distillate ages for six months in stainless steel tanks, a time chosen to maintain the pure, natural flavor profile of the cachaça.
