This spirit originates from Ilhéus, in southern Bahia, with roots tracing back to Brazil's earliest sugar mill. Though the original 1537 sugarcane plantation vanished with the mill's ruins, cultivation restarted in 2005. A new setup aims to craft a truly Brazilian distillate from fermented sugarcane juice. The current owners, originally from Campinas, São Paulo, sought a better lifestyle in Ilhéus. Farming, crops, and cachaça were unfamiliar to them. A Chemistry and Computer Science graduate took a master still course in 2004. The initial concept was a homemade drink for pals, but it evolved into a full-fledged business. This premium cachaça, aged one year in European Oak, presents an amber hue with notes of almonds, caramel, and nuts. It has 38% alcohol.
