Nestled between the clear waters of Riacho Inhumas and a scenic buritiz grove, the Reserva do Zito mill in Passagem Franca/MA is where Reserva do Zito cachaças are produced. These artisanal cachaças are made from manually cut sugarcane juice, fermented by native yeasts, and then aged in yellow ipê, European oak, or stainless steel barrels. Following fermentation, distillation occurs in a copper still. Committed to environmental preservation, Reserva do Zito sustainably utilizes solid and liquid waste from cachaça production. Vinasse is used for irrigating sugarcane fields, while sugarcane bagasse fuels the steam boiler. Combining generational distilling traditions with modern equipment and facilities, Reserva do Zito continuously strives to enhance its production process, proudly offering robust and spirited cachaças characterized by unique aromas and flavors. This expression, aged in a yellow Ipê barrel with artisanal smoking, displays a yellow-brown color. Intense toasted aromas deliver a distinct smoke that balances the scent. The palate is complex, with a velvety texture and pleasant sweetness. Its medium body and oily consistency coat the mouth with smoked flavors that transition harmoniously into brownish notes, delivering an experience that matches its aromatic promise.
