The current maker's maternal grandfather, a man of Portuguese heritage called Chico Barba, started crafting cachaça in the 1940s using a still he erected on his "Pastinho" property in Pará de Minas, Minas Gerais. Folks began seeking out Mr. Chico Barba to purchase cachaça. During its production, his oldest daughter, Maria, was tasked with sampling and assessing the cachaça's quality. Her companions would try it and joyfully exclaim in a celebratory manner: "Her father's cachaça!" Now 88, Maria proudly states she was the "taster" for her father's cachaça. Reclaiming the roots of this creation, honoring family tradition, and commemorating my grandfather Chico Barba, I initiated studies for the creation and marketing of Pai Dela cachaça from Minas Gerais. With great care and fond recollections, the yellow cachaça is aged and kept in Amburana barrels, while the traditional white cachaça matures in stainless steel containers. Cachaça Pai Dela, from grandfather to grandson, the third generation continues this family cachaça's history with pride. Cachaça Pai Dela Traditional Silver 700ml is presently made in Itaverava, Minas Gerais. It ages for 10 months in stainless steel tanks and has a 40% alcohol content. Observations: Colorless, clear and bright, grassy scents, sweetness of sugarcane, balanced alcohol, a finish that lasts a medium-long time. Source: Cachaçaria Nacional.
