CACHAÇA PAI DELA CARVALHO

In the 1940s, the current producer's maternal grandfather, a Portuguese descendant known as Chico Barba, started making cachaça in the still he constructed on his farm "Pastinho" in Pará de Minas, Minas Gerais. Locals began seeking out Mr. Chico Barba to purchase cachaça. During production, his oldest daughter, Maria, was tasked with tasting and assessing the cachaça's quality. Her friends would sample it and joyfully declare in a festive manner: "Her father's cachaça!" Today, at 88 years old, Maria proudly states she was the "taster" of her father's cachaça. Reclaiming the heritage of this production, honoring family tradition, and paying tribute to my grandfather Chico Barba, I initiated the process for creating and marketing Pai Dela cachaça from Minas Gerais. With great dedication and cherished memories, the yellow cachaça is aged and stored in Amburana barrels, while the traditional white cachaça is aged in stainless steel. Cachaça Pai Dela, from grandfather to grandson, the third generation continues this family cachaça's legacy with pride. Cachaça Pai Dela Traditional Silver 700ml is currently made in Itaverava, Minas Gerais, aged for 10 months in stainless steel tanks, and has 40% ABV. Cachaça Pai Dela Carvalho 700ml is aged for 3 years in American oak barrels, also with 40% ABV. It offers notes of vanilla and caramel with a hint of coconut, creating a unique aromatic experience. On the palate, it's smooth and velvety with a subtly spicy finish, delivering exceptional freshness.
