In the 1940s, the current producer's maternal grandfather, a man of Portuguese heritage known as Chico Barba, started making cachaça using the still he constructed on his farm "Pastinho", situated in Pará de Minas, Minas Gerais. Locals began seeking out Mr. Chico Barba to purchase cachaça. During the cachaça's production, his oldest daughter, Maria, was tasked with sampling and assessing its quality. Her friends would try it and joyfully exclaim in a celebratory manner: "Her father's cachaça!" Today, at 88 years old, Maria proudly states she was the official taster of her father's cachaça. Reconnecting with the origins of this craft, honoring family tradition, and as a tribute to my grandfather Chico Barba, I initiated the process for producing and marketing Pai Dela cachaça from Minas Gerais. With great care and fond recollections, the golden cachaça is aged and stored in Amburana barrels, while the classic white cachaça matures in stainless steel containers. Cachaça Pai Dela, passed from grandfather to grandson, with the third generation continuing this family cachaça's legacy with pride. Cachaça Pai Dela Traditional Silver 700ml is presently manufactured in Itaverava, Minas Gerais. It undergoes 10 months of aging in stainless steel tanks and has a 40% alcohol content. Cachaça Pai Dela Amburana 700ml is aged in Amburana, a Brazilian wood offering balanced notes of cinnamon, cloves, and vanilla, with a woody and sweet aroma. It contains 40% alcohol.
