This cachaça is made on the Monte Alto farm in Salinas, Minas Gerais, known as the national cachaça capital. The distillate ages in Bálsamo barrels for 3 years, imparting a woody character, a greenish-yellow hue, herbal notes, fennel, a pleasant freshness, and well-integrated alcohol with a medium-length finish. Its aroma is distinctive, with fruity scents reminiscent of dried plums and spices. The balsam wood lends the distillate a drier profile on the palate, with hints of almond during tasting. It has a higher alcohol content of 44%, but the alcohol is well-integrated.
