Cachaça Magos de Minas is produced in Itaverava, Minas Gerais, but is relocating to Betim, Minas Gerais. According to the producer, the move is due to the pursuit of higher production quality and easier trade and export, as Betim is a dry port. The cachaça has a distinctive yellow hue, is crystal clear and bright. It's prepared as a blend, featuring a batch aged in oak barrels and another batch aged in amburana, mixed in a specific proportion for a smooth sensory profile with a prominent woody flavor that emerges without being overpowering, a sweet taste with a hint of chestnuts, smooth chocolate/cocoa, honey, roasted notes, and a delicate spice undertone. Both components spent at least two years aging in their respective woods. It's versatile, enjoyable neat in small shots (50ml) or on the rocks with one-third of the glass and a maximum of two ice cubes. On warm days, it can be chilled beforehand to 20°C or less, not exceeding 12°C, which will temporarily mute the aromas that will develop as the drink naturally warms after serving. It pairs best with lightly salted, low-fat dishes, medium-aged cheeses, as well as simple sweets and milk chocolate. When making drinks, be mindful of the amount of syrup and added sugar, as it already possesses natural sweetness from wood aging. Source: Cachaça Magos de Minas website.
