This secondary barrel treatment significantly mellows the acidity and alcohol, yielding a smooth, sweet spirit. It has a highly fragrant aroma of white flowers, with hints of vanilla, cloves, cinnamon, and other spices. The flavor is light and pleasant, reminiscent of citrus fruits and dulce de leche.
