They aim to uphold their father's legacy. This drink, now known nationwide, embodies a genuine heritage formed by embracing innovation while staying true to its core. João Mendes Carvalho Cachaça rests for two years in oak casks. It's light, with 38% ABV. Made at Sítio Vó Zirica in Perdões, its production gets backing from the Federal University of Lavras (UFLA). Distilled in copper stills, only the 'heart' is kept. The sugarcane is harvested without burning to protect the environment. Freshly cut cane is milled the same day it's harvested, ensuring top quality. Fermentation happens in a temperature-controlled area to block unwanted microbes. Tasting profile: a pale yellow hue, subtle scents, notes of sugarcane, spices, and wood, with gentle vanilla, a pleasing sweetness, good balance, and a lasting finish. Found at Cachaçaria Nacional.
