In Tres Arroios, Rio Grande do Sul, at the close of the 19th century, an Italian immigrant named Erasmo Filippini, who was a tailor, brought with him the art of winemaking and grappa production. Upon arriving here, he discovered sugarcane. In the 1930s, with encouragement from his son Ermelindo, he ventured into cachaça production near the Uruguay River, a location blessed with an ideal microclimate for sugarcane cultivation. By the 1980s, escalating production costs and the proliferation of more affordable industrial cachaça led many distilleries to cease operations. However, in 2014, in the cool highlands of Alto Uruguai, the esteemed Filippini cachaça reappeared. Crafted with great care and attention, utilizing the same raw material (sugarcane) without chemical additives, and aged in various woods, each cachaça offers a distinct profile. Every bottle is unique, embodying the producer's characteristics and secrets. Meticulous details are evident throughout the entire process. The traditional small-batch method in copper stills is employed, integrated with modern technology, including temperature control, selected yeasts, appropriate resting periods in wooden barrels, and precise timing for market release. Filippini Jatobá Premium Cachaça (500ml) is produced by aging Filippini Clássica in Jatobá barrels for three years, with an alcohol content of 40%. The beverage exhibits an intense reddish or amber hue, which deepens over time as compounds transfer from the wood. Its aroma is complex and enveloping, with notes reminiscent of sweet honey, dried fruits like apricots or dates, and a subtle spicy undertone. The Jatobá wood also imparts a slight hint of vanilla and spices, creating a smooth and rich combination. On the palate, the cachaça presents a rounded character, with woody notes contributing a sweet and earthy flavor. The essence of the Jatobá wood adds a velvety texture, with nuances of caramel and a delicate hint of spices such as cloves and cinnamon. Filippini Jatobá Cachaça also displays remarkable smoothness, achieving a balance between alcohol intensity and the flavors derived from the barrel. Its finish is long and pleasing, leaving a gentle aftertaste of honey and a subtle sweetness from the wood.
