The producer's history began 30 years ago within a significant Brazilian context: Fazenda Santo Antônio das Pitangueiras, whose main house, dating back to Portugal's colonization era, is a mansion from 1715. This residence was fully refurbished by the farm's owners and cachaça brand proprietors, a couple. The Alambique Santíssima was established on the farm, commencing production of two distinct brands: Cachaça Santa Romana and Cachaça Bem Me Quer. The exceptional quality of these drinks and their appealing flavor led both brands to be immediately recognized with the “seal”: export standard, initially targeting international markets. The sugarcane is harvested manually, without burning the leaves. Post-harvest, the cane is cleaned and chopped in the field before being sent to the mill for grinding, which always occurs on the same day as the cutting. At the mill, the sugarcane juice (garapa) is extracted, prepared, decanted, and filtered. The liquid, with the correct “brix” (sweetness) level, moves to fermentation vats, where selected yeasts convert the sugar into alcohol.
