Cachaça Aviador earned a gold medal at the twentieth Brazilian Wines and Spirits competition in 2021 and was named best in the London Competitions in 2022, where it also received a gold medal. They have been producing sugarcane since around 1850 in Serra da Ibiapaba, Ceará, and were pioneers in artisanal organic cachaça production and sustainable practices. Cachaça Aviador's production is unique due to the blend of expertise in the manufacturing process, from soil preparation to bottling, combined with the mild climate and fertile soil of Viçosa do Ceará. Additionally, the raw material is grown organically and harvested by hand, ensuring high quality in the final product. In April 2024, the Brazilian government, via the National Institute of Properties, granted Geographical Indication (GI) status, specifically an Indication of Origin (IP), to Viçosa do Ceará, a production hub for this cachaça. The region now stands alongside Brazil's most renowned cachaça-producing areas, such as Salinas in Minas Gerais, Paraty in Rio de Janeiro, Abaíra in Bahia, Morretes in Paraná, and Luiz Alves in Santa Catarina. Sensory profile: golden color, aromas of honey, vanilla, toffee, woody notes, pleasant sweetness, and well-integrated alcohol with a medium finish.
