Açaí Branca Cachaça is classified as standardized, meaning it must be labeled "standardized and bottled" per Brazilian law. Standardized cachaças are not made entirely by one producer; they are purchased from third parties, meaning the brand owner doesn't necessarily own sugarcane fields or distillation equipment. These acquired cachaças often have unique aromas and flavors, which the standardizer adjusts to create a consistent final taste, sometimes through redistillation in copper stills and aging in wooden vats. This process allows for larger production volumes. Essentially, this cachaça has an artisanal character but an industrial foundation. Cachaçaria Asa Branca began in the 1970s in Salinas, northern Minas Gerais, driven by Joventino José de Queiroz's passion for distilling quality cachaça as a hobby alongside his cattle ranching. He registered his still and created the brand while listening to the song Asa Branca. After Joventino's passing, the business was nearly abandoned but was eventually sold by the family, and it remains a notable brand in the craft cachaça market. Cachaça Asa Branca Bálsamo e Ipê Ouro 600ml is aged for two years in amburana barrels, has a 42% ABV, and is packaged in standard beer bottles. It was produced 50 years ago in Salinas, northern Minas Gerais, and named in honor of Brazilian music icon Luiz Gonzaga. Source: Mapa da Cachaça and Cachaçaria Nacional.
