The planting is done properly with traceability. Sugarcane harvested by hand, without burning, undergoes thorough selection and cleaning. It's then ground within 24 hours of harvest. The juice is filtered and allowed to settle, removing impurities. The Brix level is adjusted before fermentation, which uses natural nutrients without chemical additives, demonstrating a completely sustainable method. Distillation occurs in a copper still for quality assurance, using only the "Heart" – the finest part – while discarding the "Head" and "Tail." Storage in jequitibá barrels, oak barrels, and stainless steel tanks refines the drink's sensory qualities, maturing and softening it. Aging in wood aids oxidation through porous exchange with the environment, initiating chemical reactions in the cachaça's secondary components. Esters, formed slowly and continuously, are primarily responsible for the unique characteristics developed during aging. Filtration removes any remaining impurities from the distillate after distillation, improving its clarity, transparency, and shine, and correcting issues like high copper content.
