Cherries on the nose, but there's a deeper, somewhat intriguing note. The initial dark mellow taste shifted from dark fruit to a medicinal flavor that lingers into the finish. I'm not entirely sure what I'm tasting, but it's certainly distinct.

About this bottle
This experimental bourbon undergoes a sour mash process where it is allowed to "sour" before yeast is added, unlike most contemporary bourbons that use setback from a prior batch. It is aged for thirteen years and entered into the barrel at 125 proof, compared to a paired bottle entered at 105 proof. Both are bottled at 90 proof and sold in 375ml containers.

Smooth toffee with hints of butterscotch. Has a full, oily mouthfeel. Adding a splash of water really brings it to life. If you encounter a bottle, it's worth the cost.
