(Initially rated 2.5 stars, improved after opening and airing for a couple of weeks) Spicy. Wheat characteristics. Distinctive. Not bad, but overpriced. I acquired this hoping for a spirit to unwind with at the end of the week, but it's not suitable for that purpose. I've read it was aged for only 15 months, which might explain the disappointment.

Bluebird Distilling Wheat Whiskey, produced in Phoenixville, Pennsylvania, is made from 100% North American wheat. It is aged in new, charred American oak barrels. Bluebird utilizes a custom-built copper still imported from Germany for the creation of all its spirits.

This is awful. No way to soften that statement. I guess that's expected from a 100% wheat whiskey aged only 15 months. I could tolerate it at $25, but not $50.
Nose: wood spice, vanilla, and a hint of juniper Taste: vanilla, caramel, wood, and a bit of acidic zest Finish: warm and persistent, with a touch of heat
I visited their bar in Phoenixville and sampled all their whiskey. This was my preferred choice. However, I'm uncertain if I'd purchase a bottle.
Smooth and sweet, with tastes of vanilla bread and notes of grape/cherry from the port barrel cask.
Pleasant. Distinctive. A mild sweetness. A wonderfully smooth finish.
