Bivrost Cask Aquavit

Aquavit tasting, December 17, 2022, aquavit #2 Aroma: Vanilla and oak are layered under a sophisticated mix of baking spices, especially caraway and anise. As it sits, floral and honeyed scents emerge. Taste: Buttery with complex, well-balanced spices. Citrus zest and black pepper appear later in the taste. The texture is creamy. Aftertaste: Medium length. The spices noted towards the end of the taste continue into the finish. Initially, this left a positive impression, but my opinion evolved over time. While I initially favored it over the Linie Madeira Casks aquavit (tasted first that day), its ranking gradually declined as I revisited it throughout the session. At first, the palate seemed full and well-rounded with a distinct buttery quality that persisted. However, with more time and comparison, it seemed to diminish in presence and felt less impactful on the palate than most other spirits. I also wasn't particularly fond of the aftertaste, which leaned toward sour and bitter notes, suggesting the cask aging might not have been extensive. "Above Average": 80/100 (3 stars)

A very smooth dram with apple and caraway. It's easy to drink, has a good finish, and a well-rounded profile. Good stuff.
