Having now tried a few older Armagnacs, I understand why they haven't become more popular. Firstly, they mostly taste the same to me, even more so than bourbon. Secondly, they just don't seem to be as great-tasting as I imagined or as a good cognac. Thirdly, relating to the first point, they just aren't that interesting or exciting to me. I still have a few to get through, so perhaps things will change over time, but for me: whiskey, cognac, and mezcal seem to be my top three spirits of choice. Tasting notes: bitter sarsaparilla, a bourbon-like cherry profile, heavier, and slightly spicy oak.
