You can replicate this aroma and taste really easily. Here’s how: go to a local garden center, take a handful of pine needles; then go to a grocery store and get some fennel. Combine both. Smell it, then eat it. Voila! I had bought a bottle of this just to try something different. Yeah... it’s different. Update 3/11: I had an ounce with a glass of ginger ale and ice...tastes damn good in that mix. Much better than neat.

About this bottle
The first distillery in Washington State to produce certified organic distilled spirits, Bainbridge Organic Distillery was established in 2009. Situated on Bainbridge Island in Puget Sound, the distillery emphasizes the use of locally sourced organic ingredients. Their gin is crafted from wheat spirit infused with eleven botanicals: juniper, orris root, angelica root, two citrus peels, licorice root, coriander, cardamom, fennel seed, and Douglas fir needles. The Douglas fir needles, gathered from Northeastern Washington the day before distillation, impart a green hue to the spirit, which is bottled at 45% ABV.
