Akashi Ume draws inspiration from classic Japanese plum wine, known as umeshu. For this drink, sour green plums, or ume, are picked at peak freshness. They are then steeped in casks previously used for Akashi Blended Whisky and a touch of rock sugar is added for sweetness. Following a maturation period of six to twelve months, it is bottled at 30.5% alcohol by volume.

Let sit for about a minute. Appearance: Very light gold, clear, with visible legs; Nose: Fruity with a subtle plum note, aromatic; Taste: Very sweet, like a dessert, thin and not at all viscous; Finish: Completely lacks complexity, just SWEETNESS layered with more SWEETNESS, not lasting at all.
This is a sweet whiskey. Suitable for individuals who don't usually care for whiskey or are new to it. It's also good for making cocktails where you want to avoid adding sweeteners like simple syrup.
This spirit introduced me to the world of whiskey. While my preferences have evolved, I retain a fondness for it.

Authentic and lovely plum flavor. Pleasantly sweet without being excessive. Already good when consumed straight.
At room temperature, it's smooth, sweet, and dominated by plum. It becomes significantly more balanced when chilled. An enjoyable, distinctive beverage.
