The 291 American Whiskey from 291 Distillery is a bourbon mash whiskey. It is aged for three months in American white oak barrels and subsequently treated with Aspen charcoal for mellowing.

Phoenix Lauer 3.0

Appearance: This patriotic bourbon mash is a pale honey gold, with very thin, oily legs that slowly descend the glass. Nose: The aroma is smoky and nearly saline, reminiscent of salted almonds. Hints of honey and heather, some floral notes, freshly cut grass, and lacking the sharp note of aspen dust, this batch strongly evokes highland scotch. Palate: The initial taste brings heat, followed by a dry, chalky texture. Then, subtle hints of vanilla and caramel emerge, alongside notes of spinach and plum. I found the taste to be vastly different from the aroma. Finish: A persistent dry, cinnamon finish is perceived. Overall: I'm sampling from bottle 19-0425. While I truly appreciate the nose, I believe the palate could be improved. I intend to experiment with this whiskey in cocktails to assess its performance, but it's generally acceptable, though not reaching the level I've come to expect from Distillery 291. A fantastic introductory local Colorado whiskey. Not overly complex or too simple. A touch of Vanilla, a little spice, with that distinct Colorado flavor.
