Due to significant climate shifts causing unstable periods of drought and rain, Destom implemented a strategy using sugarcane as an energy reserve to manage extended dry spells. This allowed for an increase in the number of animals per pasture area. From there, it was a short step to establishing the distillery and completing the sustainability cycle on the farm in Faria Lemos, Minas Gerais, within this integrated system of beef cattle, sugarcane, and cachaça. The producers initiated the project in 2014, employing a high-tech model. The cachaça is produced from a blend of spirits aged for one year in new American oak barrels, with three distinct toasts (3Aob – American Oak Barrel), resulting in a strong golden orange hue. It offers balanced sweet aromas and flavors, with notes of coconut, almonds, caramel, and burnt sugar, as well as honey and vanilla. It has a mild perception of alcohol, contributing sophistication and unique characteristics to the drink. Light, with a 40% alcohol content. SOURCE: Cachaçaria Nacional.
