A few things to mention upfront about this one. First, a buddy gave it to me. Not the smart one, the other friend. Second, it has “Carolina” on the label. You have to appreciate that. Made in my university town of Columbia, SC. Go Cocks! Third, and maybe most importantly. I’m not really a fan of craft distilleries. I usually dislike their whiskey, I even more often dislike the regional praise for that bad whiskey, and I most often dislike the unwarranted arrogance from the companies making that bad whiskey. I don’t want that stuff in my drink, and no, you haven't invented anything revolutionary in a couple months that compares to centuries of barrel management expertise. With all that stated, I’ll do my best to be impartial about this little guy, aged 8 months. The aroma is surprisingly layered. At first, it strongly brings to mind a pear cider, which is odd. Sugar, tartness, pear, sweet fruit, sourness, perfume, floral notes, and latex are all present. Aside from that artificial rubber scent at the end of the aroma, it’s fantastic. The floral notes are powerful. There’s a lot happening in the body too. It has a creamy, thick texture. Caramel, cane sugar, vanilla, a hint of watermelon, lemon, and brine are there, along with leather. Toasted marshmallows? I don’t get how the body follows the aroma, but I don’t mind. I appreciate both, even if they don’t seem to fit together. The finish is smoky? What the heck. This finish reminds me of some low peat scotches I’ve had. It leaves your mouth incredibly dry, with a hint of baking spices, but it’s mostly like a spicy cigar. It’s a dull but pleasant tingling on the tongue. To be honest: I don’t love this finish, but I also don’t like cigars. This could be a major positive for many bourbon enthusiasts. Wow. I love finding these unexpected treasures. This is simply good. I’ve had it three times over three weeks, and it improves as the bottle breathes. The flavors I’m less fond of fade into the background over time, leaving me with something very intricate and puzzling. I have no idea how they accomplished any of this, let alone in 8 months. I’m impressed so far, and I’m very eager to see their future creations. Update: A friend informed me this bottle is being discontinued for longer age statements. That’s a bit disappointing, but I can’t fault them for improving their product. Also, I heard these guys had to shut down due to COVID. I truly hope they recover.
