Even though it's only 8 years old, it presents a complex flavor profile like a bourbon aged much longer (over 12 years), with a pleasing dark color. The finish is a bit brief. It uses a different mash bill than the standard Woodinville straight bourbon. A must-try if you have the chance!

About this bottle
Founders Brett Carlile and Orlin Sorensen tested eight distinct barrels from Independent Stave Company to identify the perfect one for their 8 Year Straight Bourbon. The chosen barrel featured 24-month open-air staves with a heavy toast and light char. This bourbon matured for just over eight years in these barrels before being bottled at 100 proof. The initial 500 bottles will be available at the distillery starting at 10 am on August 17, 2024, preceding a nationwide distribution that begins in September 2024.

The distillery's character is evident. It still seems a bit young. Oak is prominent but tastes like something different.
An explosion of apple and caramel, present from the aroma through the finish. A great find.
