This is the first actual rum I have sat down to taste and explore. As a dedicated whiskey drinker, this rum is definitely a crowd-pleaser for me. On the nose, there is significant lemon/citrus and oak. Sipping, I get a good amount of oak and spices. There is a slight vanilla that emerges, reminding me of whiskey, but it remains very heavy on the spice and oak. I really enjoy this rum and it has set high expectations for future rums.

Dan Termini, the distiller at Wicked Dolphin, has a background in craft beer, making the distillery's exploration of aging in former beer barrels unsurprising. The pot still rum, originating from Florida, is initially aged for two years in ex-bourbon barrels. These specific barrels, after containing bourbon for three years and rum for two, are then sent to a brewery for a nine-month period to hold stout. The final stage for the barrel involves its return to Wicked Dolphin, where it imparts further character to the rum for an additional year.
