With time in the glass, more herbal notes emerge like mint, thyme, and rosemary with a bread-like quality. Almost a hint of sweet lemon and honey. Taste: Anise, earth, vanilla cream, heavy oak burn. Light dill. Allspice cinnamon. Light citrus and earthy cigar smoke. The finish transitions to dark chocolate coffee and mocha with a kind of aged dark red wine tannin. Adding water enhances the oak, herbal, fruity, and spicy aspects without diminishing the other flavors. The finish becomes a strong oak and hot pepper combination, but it never becomes too overwhelming.
