This release is part of the Outpost series from Seattle's Westland Distillery, emphasizing the barley component. "Colere," the series name, is Latin for "to cultivate." For this second edition, Westland utilizes Talisman, a two-row winter barley. The brand also exclusively uses used casks to allow the barley's character to emerge. Both second-fill Independent Stave Company Cooper's Reserve barrels and first-fill ex-bourbon barrels are employed. Worldwide availability is limited to 3,000 bottles as of May 2022.

Aroma: Vanilla, honey, cherry candies, molasses, smoke, browned butter, strawberries, and caramel. Taste: Strawberries, marshmallows, vanilla, dark chocolate, hay, honey, peaches, cherries, raspberries, and figs. Ending: Strawberries, watermelon, butterscotch, honey, almonds, toasted vanilla, pears, green apples, and mocha.
The nose offers barley and pear, or perhaps a tart apple. It's rich and sweet, with a mellow spice beneath the fruitiness. For me, it drinks like a dessert whiskey, reminiscent of spiced apple pie filling.
