Westland Distillery is dedicated to exploring the potential of barley, as demonstrated by its latest series of whiskeys. Each release highlights a different variety of malted barley and the resulting flavor profiles. The three whiskeys in this series were aged for 49 to 50 months in ex-bourbon casks from Heaven Hill and were distilled using Belgian Brewer's yeast. Cask #2560 utilizes Maris Otter barley from Thomas Fawcett & Sons, a variety historically used in traditional British ales and known for its biscuit-like flavor.
