Shane Sanborn 3.3

Nose: Nutty, reminiscent of oily nuts like almonds and cashews. A light but distinct earthy peat. It smells young, as it is. The bourbon cask's vanilla notes are perceptible. Palate: A youthful spirit, very nutty, with almonds being a dominant flavor. Gentle peaty smoke adds another layer. Finish: Dried orchard fruits, golden raisins, with some oak attempting to assert itself, though inconsistently. A lingering dryness, similar to tawny port, is present. The finish is almost salty. Observations: This immediately brought to mind smokehouse almonds. The port contributes brief fruitiness, but the nuts are the primary characteristic. It's quite unique. Update: A few drops of water unexpectedly brought out some ethanol on the nose but significantly intensified the finish with spice, like hot black pepper. Chemistry is fascinating.
