Tormore 30 year 1991/2021 Connoisseurs Choice Cask Strength (Gordon & MacPhail)

Nose: A gentle aroma of mature oak, honey, and beeswax, with notes of sugar-coated cereal flakes, frangipani, mango, and ripe rockmelon. It evokes the scent of a bouquet of fresh flowers and tropical fruit resting on a pine dresser, polished for years with beeswax, situated in a bright, sunny room with open windows and a warm summer breeze. A small addition of water reveals notes of golden syrup, dried figs, and lightly warmed almonds. Palate: The initial taste is intense, with soft, old tannins and lignin that provide a comforting embrace. It has lightly toasted muesli with tropical fruit and honey-sweetened yogurt. The flavor develops into a maltier, more robust profile with dried fruits, leather, golden syrup, and treacle emerging, leading to a combination of milk chocolate, chewing tobacco, and nuts. The progression is slow, intricate, and distinct. The texture is reminiscent of thinned honey, with a faint ashy (barrel char?) note appearing near the end. Adding water enhances the nutty and dark fruit sherry cask influence. Finish: Medium to Long. Continuing from the palate, the whisky evolves into the aftertaste, becoming drier and firmer, with earthy tobacco and a hint of maritime brine in the conclusion. This was an exceptional whisky, and I summarized my tasting notes in my journal with two words: absolutely exquisite. It was distilled in September 1991 and placed into a refill sherry butt (distillery cask #15386), where it aged for 30 years before being bottled in December 2021, yielding 488 bottles at 55.7% abv. That's quite remarkable considering the minimal loss to evaporation over three decades! Released as part of Gordon & MacPhail’s Connoisseur Cask Strength range, this is a superb whisky that can still be found at some retailers.
