About this bottle

The Whistler Irish Honey, known as The Beekeepers Select, is one of three expressions in the Trilogy Series, all developed by Michael Walsh, who serves as master distiller, master blender, and family beekeeper for the owning company, Boann Distillery. This product begins with blended Irish whiskey aged in ex-bourbon barrels, which is then combined with honey collected from the family's orchards near the Hill of Tara in Boyne Valley. It is bottled at 66 proof.

Sage Marion 3.0

Aroma: hints of sweet honey, graham crackers, and a touch of whiskey. Palate: follows the aroma, with honey, graham crackers, a nice touch of cinnamon, light oak, and an almond creaminess at the finish. The finish is surprisingly long for a sweet whiskey; it's sweet and cinnamon spicy, but not overly hot, just enough to remind you it's whiskey, which is very pleasant. I'm not usually a fan of flavored whiskey, but this is good if you want a change of pace, though it leans more towards sweet than whiskey flavor.

The aroma is a bit odd. It tastes very much like honey, so much so that my dietary habits prevent me from drinking it. However, I suspect it would be fantastic poured over vanilla bean ice cream.

It has a pleasant honey taste mixed with a less desirable Irish Whiskey flavor. After they combine, it reminds me more of a "butterscotch whiskey." I would consider drinking it again, as it wasn't terrible.
