About this bottle

This is a single barrel bottling of Savage & Cooke The Burning Chair bourbon, created from a mash bill containing corn, rye, and malted barley. Following its initial aging, it is finished in barrels that formerly contained Dave Phinney's Old Vine Wine, a mix of California Cabernet, Zinfandel, and Grenache. The bourbon is bottled at 88 proof.

2019 Release A rich Bourbon Whiskey by Dave Phinney for The Savage & Cooke distillery in Mare Island, California, made from a mash bill of 75% Corn, 21% Rye, and 4% Malted Barley. It was aged for at least 4 years in new charred American oak barrels, then finished in his Napa Cabernet barrels before being bottled at 44% alcohol by volume. It has a rich start with notes of brown sugar, caramel, butterscotch, and toasty oak; a full middle adds notes of vanilla bean, baking spices, maple, and baked apples; leading to a long and balanced finish. July 2019 / August 2022

Nose: Cereal cooked with a dinosaur egg, artificial strawberry, crushed red grapes. Tasting: Strawberry, oak, vanilla cream, caramel, butterscotch, cherry. Finish: Marshmallow butterscotch, medium.

This is a pretty excellent bourbon. It has a delightful oak and vanilla sweetness, concluding with tart grape from the wine barrel. I truly enjoyed this.

Classic bourbon aroma: caramel. Wine notes are immediately noticeable upon sipping, gradually fading. If I'm in the right mood, it's quite enjoyable.
