Juniper is present, along with citrus and a grape sweetness, but it leaves a dry coating sensation. The long finish features dry oak, bitter notes, citrus peel, and a tingling herbal nettle. It's intriguing drunk neat—a positive observation. It's less sweet and mellow than some other barrel-aged gins, but it possesses that forest floor character typical of the Pacific Northwest. I'm very impressed with the gins produced by Temple Distilling. More people ought to discover this craft gem. This gin works exceptionally well in a Tom Collins; the sugar and lemon balance the spice and dry oak, creating a more captivating rendition. It's also great with tonic, resembling a woodsy, double-strength G&T.
