Beehive Distilling ages its Jack Rabbit Gin in new French oak barrels that previously held white wine, typically chardonnay. The distillery handles the charring in-house. The gin rests in these barrels for approximately nine months.

Exceptional. Just the right amount of vanilla and caramel to evoke bourbon, without being overly sweet. They retain some heat by including the heads. The barrels are re-charred French oak Chardonnay, aged between 9 months and 3 years. They utilize constantly fluctuating temperatures to enhance flavor absorption.
Oak smoothes out sage and juniper. A pleasing sweetness and texture on the palate. A fantastic showcase of the Old Tom style, highlighting its Utah (sage) origin.
It evokes the taste of apprehension, farm life, and sincerity.
