Still Austin Bottled in Bond Red Corn Bourbon Whiskey (Summer 2023)

DRINKING IT STRAIGHT AROMA - Red Apples, Dark Fruits, Caramel PALATE - Incredibly smooth, sweet, and enjoyable. The palate is full of apple and dark fruit, with caramel appearing at the end. This bourbon is exceptionally well-balanced. FINISH - Long, smooth, and sweet. OVERALL: Given that this is a limited release, I highly recommend trying a bottle to experience what they are producing at Still Austin. I've previously stated they are the top distillery in Texas, but I now believe they can genuinely compete with some Kentucky distilleries. Give this a shot. Don't overlook it if you've been passing it by.

Still Austin “Red Corn” Nose: brown sugar and vanilla Palate: Vanilla Coke or like a light cream soda. It’s delicious. A friend noticed the Vanilla Coke note too, and she rarely picks up tasting notes 😂. I also got a bit of cherry coke on the second pour. Caramel. Finish: rye spices on the back end. I acquired this bottle at a large liquor store in Texas because it seemed like an unusual mash bill, but it turns out it's legitimate. This distillery makes really good Texas spirits without that distinct Texas earthiness. I'm not a fan of the Texas hay funk.

Starts with sweet corn, mostly vanilla and some toasted nuts. The body feels somewhat dry, introducing lighter oak and hay notes, along with spiced apple slices and more ginger/spice. The finish is also somewhat dry and medium in length, carrying spice without being sharp or overwhelming. This is a fantastic whiskey that's easy to drink, packed with flavor, and incorporates interesting red corn elements.

This bottle requires some patience to open up. The aroma is reminiscent of caramel apple and a bit of old-fashioned perfume, which is the less appealing aspect. The taste is an improvement: it has apple bubble gum, black licorice, smooth corn oils, and a pleasing complexity from the red corn (almost like amaretto), which has replaced the perfume scent.

Nice mouthfeel. Made with 46% Jimmy Red Corn, 34% White Corn, 25% Rye, and 5% barley. It's rich, velvety, and pleasing. Notes of caramel, sweet cornbread, vanilla, cherry, and syrup are present.

I could smell this bourbon for days. There is a burnt orange note reminiscent of spiced rum on the nose.
